Cooking at home

Let me cut straight to the point before anyone get's their panties in a wad. I make dinner almost every night not Charlie but me. This was not some kind of misogynistic thing...for some reason people get real up tight talking about women in the kitchen. I'm here to say, I love cooking and I truly love cooking for others and especially Charlie. I feel like I'm loving him well and I'd beg to argue that a chocolate chip cookie or fresh lasagna might be his love language.

With that being said ever since COVID hit and I moved back home with my parents I have made dinner basically every night. Again, because I wanted to. Over the course of our 6 month shut down let's just say I've got it down, my friends. Every Monday, I scan the pantry and refrigerator, I see what we have, what we don't have and most importantly, what needs to get trashed! I then crack open some cookbooks or take a scroll through Pinterest and chalk up the recipes I'd like to tackle that week. I usually pick 4 meals because I noticed due to bible study, work, travel and other shenanigans we'll typically eat 4 dinner meals at home.

Now, that I've got my rhythm down, it's all about to change! I'll be cooking for two (well basically three) and I have a new schedule to accommodate. My plan for this recipe page is to post the recipes I made from the previous week so that I can HONESTLY recommend them to anyone who is interested. I thought this might be fun because it seems like a lot of those Pinterest recipes aren't quite as simple as they advertise. However, since I don't know exactly how Charlie's schedule is going to be I want to post a few winners that I've found while at home. Hopefully this will keep you busy until I've found my way around the grocery store and Charlie's schedule on the West Coast.

Recipes to try:

Night one:

Teriyaki Salmon 'sushi' bowl

-A fave. My little brother is very picky and he would love this!

-I made this with sushi rice, avocado, everything bagel seasoning and YUM YUM!

-I'd recommend adding edamame and you definitely need some kind of sauce which is why I used the Yum Yum sauce.

Night two:

Garlic Butter Turkey Meatballs with Zoodles

-I made this vegan by forgoing the butter and cheese

-I didn't use a bouillon cube and the meatballs still had so much flavor

-Highly recommend the zoodles with this recipe because the zucchini noodles do a wonderful job of soaking up all the flavor.

Night three:

Bruschetta Chicken w/ salad and toasted bread

-Such an easy meal and very nutritious

-I threw it together with a side salad (mixed greens, S&P, olive oil) & toasted a loaf of bread with butter

Night four:

Balsamic Steak Salad with grilled corn

-This was a household fave!

-Great thing about steak is that it takes little to no time

-The more veggies added the better!
